Breakfast for days

There are a lot of people that say breakfast is the most important meal of the day, and it may be true. For busy professionals though, sometimes its an accomplishment to have the coffee made by the time you need to be out of the house. Preparing your meals ahead of time can really help to get your mornings started off right, even if you aren't a morning person. 

These egg muffins are great because you can make a whole bunch at once, and enjoy them for several days. 

RECIPE: Prosciutto or Bacon Egg Muffins

INGREDIENTS

  • 8 eggs
  • 6 slices prosciutto (or 8 slices bacon)
  • 1 small onion, chopped
  • 1/4 cup mushrooms, chopped
  • 1 cup spinach
  • 6 cherry tomatoes
  • 1/4 cup shredded mozzarella

INSTRUCTIONS

  1. Preheat oven to 400F. Chop onions and mushrooms and begin sautéing in a pan. Sautee until onions are soft, then add spinach. Meanwhile add 8 eggs to a large bowl, and mix. Once vegetables are finished sautéing, add them to the egg mixture.
  2. Spray a muffin tin with the non-stick spray of your choice, and then line each muffin space with half a slice of prosciutto or bacon. 
  3. Pour egg mixture into muffin tin, fill each well approximately 3/4 of the way. 
  4. Add cheese and half a cherry tomato on top, then place in oven for approximately 15-20 minutes. Serve hot or save for later!

Preparation time: 15 minutes

Cooking time: 15-20 minutes

Number of servings (yield): 12 muffins
